How do you use your left over Easter Eggs?

Some of us tend to over indulge during the Easter period this can not be denied and I for one admit that yes I did and yes I loved it!

However now that the Easter is over and we are fast approaching May I am less than excited to see the enticing chocolate still laying around the house! How many eggs did we get!!!

So instead of continuing to hide under the table and sneak a cheeky piece of oval chocolate goodness I have decided to once and for all get rid of the delicious Easter treats. Now I definitely do not believe in wasting food, I like to use everything I have and turn it into another deliciously tasty treat and here’s how:

1) Rice Crispy Cake

I get a pot and a large heat able bowl, fill the pot about half way or a little less with boiling water and place the bowl on top, ensuring that the bowl does not touch the water

I break the chocolate eggs up in to pieces and place in the bowl on the top of the pot

With a wooden spoon I stir the chocolate until it has all melted and is nice and smooth (ensure not to overcook as the chocolate will burn – once the pieces have just about melted take the bowl off the pot and stir)

Then on a plate I place baking paper

I add loads of rice crispies to the chocolate and stir (If we’re doing in it in measurements which I don’t as its less fun I would add 300g of chocolate to 85g rice crispies) but you should be able to tell when you’ve got the ratio you like

Then with the spoon layer you plate with the rice crispy and chocolate goodness and pop in the fridge for about 2 hours or until the cake has hardened

2) Rocky Road

Take 200g digestives and place them in a freezer bag. Squeeze the air out and seal the bag, and then bash with a rolling pin until most of the biscuits are in tiny pieces (this is great for stress relief )

In a large saucepan melt 300g leftover Easter eggs, 100g of butter, and 3 tablespoons of golden syrup over a low heat and keep stirring.

Once it has all melted, stir together, and take off the heat.

Add the crushed biscuits, 100g mini marshmallows, and optional 100g raisins or other dried fruit for a healthier affect. Stir well!

Scoop the whole lot out into a lined baking tin and allow to set in the fridge.

You can also decorate the top at this point with sprinkles or whatever your heart desires
